Eggplant Brown Inside: Overripe Fruit and Cold Storage

Glossy purple eggplant on the plant

An eggplant brown inside most often comes from fruit left too long on the plant. Cold storage below 50°F can also brown the flesh plus seeds.

The short answer

Illinois Extension says overmature eggplant may be brown inside with large tough seeds. Press the skin with your thumb. If the dent stays the fruit is past its prime. NC State says chilling below 50°F browns the flesh plus seeds. Pick glossy fruit 6 to 8 inches long.

Why is my eggplant brown inside?

Illinois Extension says fruits that turn dull or brown are too mature. Overmature fruit is spongy, seedy and may be bitter. NC State adds that seeds turn brown and hard when fruit is past its peak. Fruit over 9 inches may be overmature.
Thumb dent stays: overmature fruit. Brown hard seeds: past its peak. Dull skin: too mature.

Can cold turn eggplant brown?

Minnesota Extension lists chilling injury as a cause. The seeds plus inside of the fruit turn brown. Symptoms may take 5 to 7 days to show. NC State says eggplant stored below 50°F may show pitting plus bronzing of the skin. This injury builds after harvest. The NC State plant page calls eggplant very sensitive to cold.
Store above 50°F: avoids chilling injury. Watch for bronzing: sign of cold damage. Use soon: fruit does not store long.

How do you pick eggplant at the right time?

Illinois Extension says harvest when fruits are 6 to 8 inches long and still glossy. Cut with a knife or pruners. Leave the green calyx on. If the flesh presses in then bounces back, the fruit is ready. Hard flesh means young fruit. NC State says a fresh green calyx is a good sign.
